Humans have more bones as adults than as babies.

It's the other way around! Newborns actually have about 300 bones, while an adult human has around 206. Many of a baby's bones are smaller and largely consist of cartilage, and these then fuse or ossify during childhood to form the larger, stronger bones we have as adults.
